The 15-hectare vineyard is located at 620 metres above\u003cbr\u003esea level. All the operations related to the vineyard are carried out with total respect for\u003cbr\u003ethe environment. Al Cantàra also means ‘bridge’ in Arabic which emphasises the link with\u003cbr\u003ethe Sicilian terroir and symbolises the union between wine, art and poetry. Owner Pucci\u003cbr\u003eGiuffrida is a devotee of fine poetry and for this reason all of the names of the wines are\u003cbr\u003einspired by the poems by Sicilian authors.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThis rare white wine is made from the dark-skinned red variety Nerello Mascalese. The\u003cbr\u003ewhole grapes were pressed and vinified reductively with low sulphur content. Fermentation\u003cbr\u003etook place with selected yeasts in stainless steel tanks and lasted for 12 to 14 days at\u003cbr\u003econtrolled temperatures of 14 to 18°C. Following fermentation, the wine rested on its fine\u003cbr\u003elees between four to six months at low temperatures with stirring three times per week to\u003cbr\u003eimpart texture and delicate complexity.
